The 6 successes for each ring don't need to be achieved on the same day, so if I miss my Move ring today but get my Exercise ring, that day's Exercise ring counts toward its goal of 6/7. (And I need to be perfect on the Move ring for the rest of the week.)
On the rare occasion where my Apple Watch dies before I've gotten my rings for the day or I wasn't wearing it for another reason, I will go by the spirit of the goal and do my best to guess whether or not I'd have gotten my goal. This has only happened one time at the very end of the day.
