I have never been to Mexico before, but love traveling and meeting new people. This sounds fun, and I would like to make it work.

Oh no! I think it's possible to get an expedited passport if you have flights booked already; it's what I did to get to EA Bahamas on time https://manifold.markets/Austin/will-i-make-it-to-ea-bahamas-by-apr:

So I called the line, and got an in-person appointment fairly quickly; at the appointment center, I got my passport back same-day.
I did have to book the appointment in Minneapolis, so I routed a flight through Minneapolis on the way to the Bahamas; but if you have about a week of notice you might be able to get an appointment closer to where you live!
