I think you could make the shortest pitch shorter by dropping either of the middle two words. It reads/sounds better with either than it does with both IMO.
up until very recently the minimum cost of a professionally assembled set of PCBs was measured in thousands of dollars and several weeks of time
This highly depends upon the quality and complexity of the PCB, where you are in the world, what access to vendors you have. I have gotten PCB's done in a day when I lived in Shenzhen over a decade ago. Advanced Circuits has existed with their professional quick turn around for over a decade, I would imagine that other providers in the electronics industry have developed and bought quick turn around systems.
Just doing a quick search you've got DK Red now which gives you 4PCB's for $144 with a day turnaround time, which sounds similar if not better than Advanced PCB from over a decade ago.

I am skeptical that you will find someone on Manifold as folks who work in electronics are scarce to begin with, and likely even more so on Manifold.
@PatrickDelaney "assembled" is the key word here, just the raw PCB with 2-4 layers has been effectively free for a while
Interesting premise! Some basic questions:
How much are you looking to raise? At what valuation?
Who is on the team? What are their backgrounds?
What does the MVP look like?
