Battle Royale Night: Fight over a shrinking arena. Players could be "killed" with something like a Nerf gun, or by capturing a photo of them and sending it to a groupchat (which would focus the game on stealth.
Long term strategy night: A game of Diplomacy, Tank Tactics (rules explained here) or similar is set up, with players making moves all throughout the night.
Werewolf/Mafia Night: Straightforward, many rounds of Werewolf, possibly with changing rules like adding new roles or affecting the ratio of werewolves to villagers. At the end of the night, create a round with no werewolf where the host randomly eliminates villagers, sit back and watch the fireworks.
