Sh*it, I mean 6 ! Kill Six Billion Demons https://killsixbilliondemons.com/about/
I wish I could say *Though You May Burn To Ash*, but sadly the author recently died, leaving it unfinished

Available to read here: https://reader.kireicake.com/read/frieren_at_the_funeral/en/0/1/page/1 Maybe not a great fit as the world is a reasonably generic fantasy world, and the mechanics aren't especially front-and-center. The writing and characters are excellent, though, and it takes a somewhat different frame (viewpoint character is the mage of "the hero's party", following her life in the years AFTER the "defeat of the demon king")

Available to read here: https://guya.cubari.moe/read/manga/Oshi-no-Ko/ Falls into "interesting ideas", I think. The characters are unique for showing off different aspects of what it's like to be at the top of your field; drawn in large part from the mangaka's own experiences of being top-selling authors and artists. Some (very brief) notes I took: https://blog.austn.io/posts/oshi-no-ko-and-hard-work
