I've done a full Vic2 playthrough as France, and almost did a Vic3 playthrough starting as Belgium but ended up quitting.

Joseon is pretty fun! I've played them imagining a narrative where I forcibly modernize them in anticipation of colonizers coming and wrecking everything, and end up as very nearly the same evil I warded off (except Joseon doesn't have slavery so it's technically good and moral to take over Siam for mass manumission :) )
