Resolved the final three. In a bit of a surprise, my interpretation of "Every track avaialble at launch will be present in the open world map" is NO based on that Rainbow Road appears to be inaccessible in Free Roam and essentially detached from the rest of the open world. It does technically appear on the map interface in the sense of teleporting to it, but you cannot drive to it in the open world as with other tracks, so I believe this should be NO.
Resolved the super obvious ones for now, going to play a couple more days to confirm these, I haven't unlocked Rainbow Road yet for one:

Obviously, you can 'race' someone by just driving next to them... but if this is meant to mean a specific 'challenge' feature to do so officially, I don't think that exists.
@Jubs Does vehicle type count things like transformations when a kart goes over different types of terrain, e.g, a sled if it goes over a snowy section?
@MingCat Sorry for the delay. My intent was vehicle type in the sense of transformations as you said, in the vein of MK7 introducing flying and underwater vehicle types when you enter water or race off a flying pad. I did not mean karts that you pick in customization. So your written example of say a sled over a snow section would count for YES, but the photo you posted would not. Do you have any examples of the former?
