EU digital markets act (DMA) will force Apple and other large OS vendors to allow sideloading software and allowing the replacement of default apps with user-installed ones. The law should be enforced starting March 2024.
Personally I'm very interested in having a call recorder, as that would make interacting with untrusworthy businesses easier. I also have an awful memory, so not having to take notes during calls would be nice. I live in Finland, where it's fully legal to record calls without any notice.
Requirements for the software:
- The source must be available for download, and it must be under an OSI-approved license 
- The software must be able to record both incoming and outbound phone calls 
- The software should be enabled-on-startup, so that there's no need to specifically open it before it's the default for incoming calls 
- There must not be any noticeable audio issues like delay or bad voice quality 
- I can be either a separate app or replacement for the phone call app, or anything else that works 
- The app must not be afwul to use by my judgement
