Honey has a multitude of meanings, but lets accept that it is important food stock that is easily kept, and it rich with carbohydrates and other helpful and/or essential nutrients.
... due to these properties, it was often a lifesaver for people from the simpler times.

Its harvesting is a careful practice, that should not be too exploitative, since it can easily disturb the colonies of bees and lead to their decline...

In other words, one must mind the source it harvests ....
